Japanese Potato Salad

Frekin' easy! I promise!

              
Japanese Potato salad
Serve cold




Ingredients
Potatoes                                                                   ½ kg
Cucumber                                                                  1-2
Carrots                                                                       1-2
Onion (finely chopped)                                             1
Egg (boiled)                                                              2
Japanese Mayonnaise                                            1/2 cup
Salt (for cucumber) + pepper                                  To taste
Chicken stock (powder)                                           2 table spoon


Method
1. Sliced cucumber thinly and add about 3 spoon of salt, put aside for an hour or so, rinse cucumber and throw away excess water. This is to salt the cucumber to taste and to avoid the mixture to be easily spoil, the slightly salted cucumber will be preserved quite well with this method. Just make sure there is no excess water.

2. Boil potatoes and carrots until rather soft, then peel. Mash Potatoes roughly, leave to cool.
3. Add the finely chopped onion, pepper, chicken stock, to the mix.
4. Add the boiled eggs and cube carrots last, so that they are still in presentable shape.
5. Mix them well and serve cold, along with main course.
6. Can be store in the fridge up to a week if it’s prepared properly.

You can omit egg IF you are allergic!
Watch the salt, you don’t want high blood pressure! I advice not to add salt to the mixture as the salt from the cucumber is more than enough.
